  • Water: Roughly 5 gallons, preferably filtered or spring water.
  • Yeast: Choose a high-quality wine yeast, like Red Star Montrachet or Premier Blanc.
  • Yeast nutrient: This will help ensure a healthy fermentation process.
  • Acid blend: This balances the acidity in the wine.
  • Pectic enzyme: Helps break down the fruit and can improve clarity.
  • Camden tablets: These are used to sanitize the equipment and stabilize the wine.
  • Wine equipment: You'll need a fermenting container, airlock, siphon, hydrometer, thermometer, and some kind of straining cloth (like a mesh bag or cheesecloth).

    1. Prepare the blueberries. Wash and sort your fresh blueberries, ensuring you remove any stems, leaves, or unripe berries.
    2. Mash the blueberries. In a sanitized fermenting container, mash the blueberries using your hands, a potato masher, or whatever utensil you find works best. You want to release as much juice and flavor as possible without turning it into a puree.
    3. Add sugar and water. Mix in the granulated sugar and water until the sugar is dissolved. You can add more or less sugar depending on your desired sweetness.
    4. Add remaining ingredients. After you've added the sugar and water, mix in the yeast nutrient, acid blend, and pectic enzyme. Stir well, then cover the container with a clean towel and let it sit in a dark, cool place for 24 hours.
    5. Add the yeast. After 24 hours, sprinkle the yeast on top of the blueberry mixture. Don't stir – just let it sink naturally into the mixture. Attach the airlock to the fermenting container and place it back in the cool, dark spot.
    6. Fermentation process. The primary fermentation process should take about one to two weeks. Once the bubbling slows down significantly, it's time to move on to the next step.
    7. Straining and racking. Using your siphon and straining cloth, separate the liquid from the blueberry pulp and transfer the liquid to a secondary container (preferably a glass carboy) to continue fermentation.
    8. Secondary fermentation. Let the wine ferment for another month or so until it becomes clear and stable. Use Camden tablets to help stabilize the wine.
    9. Bottling. Once your wine has reached the desired taste and clarity, it's time to bottle it! Siphon the wine into clean, sanitized bottles and cork them securely.
    10. Aging. Blueberry wine can be enjoyed young, but for optimal taste, we recommend aging it in the bottles for at least six months to a year.
