To begin your blackberry wine-making journey, you'll need the following ingredients and equipment:

  • 4 lbs fresh blackberries
  • 2.5 lbs sugar
  • 1 gallon water
  • 1 packet wine yeast (we recommend using Lalvin or Red Star wine yeast)
  • 1 tsp yeast nutrient
  • 1 tsp pectic enzyme
  • 1/2 tsp potassium metabisulfite or Campden tablets (to sanitize the fruit)

Equipment:

  • Large pot or fermenting bucket with a lid
  • Fine mesh bag or cheesecloth
  • Strainer or colander
  • Fermentation airlock and bung
  • Large funnel
  • 6.5-gallon glass carboy (large glass container with narrow neck)
  • Racking cane and tubing
  • Hydrometer
  • Wine bottles, corks, and a corker
  • Sanitizing solution

    Step 1: Sanitize Your Equipment

    Before you begin, ensure all your equipment is properly sanitized. Use the sanitizing solution to clean the fermenting bucket, utensils, and any other tools you'll be using. This helps prevent any bacterial infection in your wine.

    Step 2: Prepare the Blackberries

    Start by washing the blackberries thoroughly and removing any dirt and debris. Place the clean blackberries in the strainer or colander and gently crush them with your hands to release the juice. Transfer the crushed blackberries and juice to a sanitized mesh bag, then place the bag in the fermenting bucket.

    Step 3: Boil Water and Sugar

    Next, bring the 1-gallon of water to a boil and dissolve the sugar, stirring well to combine. Slowly pour the hot sugar water into the fermenting bucket over the blackberries.

    Step 4: Cool and Add Additives

    Allow the sugar water and blackberry mixture to cool to room temperature. Once cooled, mix in the pectic enzyme, yeast nutrient, and potassium metabisulfite (or crushed Campden tablets). Cover the fermenting bucket and let it sit for 24 hours.

    Step 5: Add the Yeast and Ferment

    After 24 hours, sprinkle the wine yeast over the blackberry mixture. Attach the fermentation airlock and bung to the fermenting bucket. Store the bucket in a dark area with a consistent temperature of around 68°F to 77°F. Fermentation will start within 24 to 48 hours and can continue for seven to ten days.

    Step 6: Rack the Wine

    Once fermentation is complete, it's time to separate the wine from the fruit and sediment. Remove the mesh bag of blackberries and use the racking cane and tubing to transfer the wine into the glass carboy. Attach the airlock and bung to the carboy, and store it in the same dark area for an additional four to six weeks.

    Step 7: Bottle and Age

    After four to six weeks, it's time to bottle your Blackberry Wine! Prepare your bottles by properly sanitizing them, and then use the racking cane and tubing to fill each bottle. Cork the bottles with a corker and store them on their sides in a cool, dark space.

    For the best taste, allow your Blackberry Wine to age for at least six months before enjoying it. The longer it ages, the more refined the flavors will become!
