    Fermentation

    Primary Racking

    Once fermentation is complete, it is time to separate the wine from the grape solids. This is done through the process of racking, which involves carefully siphoning the wine into a new, sanitized container to leave any sediment behind. Once the wine has been transferred, secure your airlock and let it rest for another two weeks.

    Secondary Racking and Aging

    After two weeks, the next racking process should be done to clarify the wine even more. From this point, your wine will benefit from further aging, which can be anywhere from a few months to over a year. Aging helps to soften the wine's tannins and contributes to its distinctive profile. Patience is key – the longer you age your wine, the better it will taste.
