What is Toilet Wine?

Also known as "hooch" or "pruno," toilet wine is a homemade alcoholic beverage unlocked through a creative and resourceful fermentation process. Originally popularized by inmates in prison, this unconventional drink has made its way into the artsy underground scene.

Ingredients:

  • Fruit (e.g., oranges, apples, grapes, or fruit cocktail)
  • Sugar (white or brown)
  • Water
  • Yeast (bread yeast or brewing yeast)
  • Ketchup (optional, for added acidity and flavor)

Equipment:

  • 2 cleaned plastic bags
  • 1 cleaned container with a lid (jar, water bottle, etc.)
  • 1 towel or blanket to keep your pruno warm during fermentation
  • 1 strainer, cheesecloth, or clean cloth to strain the liquid
  • 1 funnel (optional, for easy transfer)

Step-by-Step Guide to Making Toilet Wine:

  1. Chop the fruit into small pieces and place them in the first plastic bag.
  2. Add sugar to the bag and mix it well with the fruit.
  3. In the container, add 1 cup of warm water and the yeast. Stir until the yeast is dissolved.
  4. Add the fruit and sugar mixture into the container. If needed, use a funnel to prevent spillage.
  5. Add more warm water to fill the container, leaving about an inch of space at the top. Mix well.
  6. Seal the container, but open the lid slightly to allow gas to escape during fermentation. Wrap the container with a towel to provide insulation and keep it in a dark place with a steady temperature (between 70°F and 80°F).
  7. Let the toilet wine ferment for at least 5-7 days. It may ferment faster or slower depending on the fruit, sugar, and temperature. Check on the wine once a day and take note of any changes in the smell and consistency.
  8. After fermenting, strain the liquid into the second plastic bag using the strainer or cheesecloth. Discard the solid fruit remains.
  9. Seal the bag and place it in the freezer to speed up the yeast settling process. Wait for a few hours or overnight before removing it from the freezer.
  10. Transfer the liquid back into the container, being careful not to include the settled yeast, and seal the container. Your toilet wine is now ready to serve!
