Before you dive into wine-making, you'll need to gather all the necessary ingredients and equipment. Here's what you'll need:

    Ingredients:

    • Approximately 3 pounds of fresh or frozen raspberries
    • 2 pounds of granulated sugar
    • 1 gallon of water (preferably distilled or filtered)
    • 1 teaspoon of pectic enzyme
    • 1 teaspoon of yeast nutrient
    • 1/4 teaspoon of wine tannin
    • 1 package of wine yeast (we recommend using a specific yeast strain for fruit wines, such as Lalvin 71B)
    • 1 crushed Campden tablet (optional, for sterilizing the must)

    Equipment:

    • A large, non-metallic container or fermentation bucket
    • A fine-mesh strainer or cheesecloth
    • A long-handled spoon for stirring
    • An airlock and bung
    • A glass or plastic siphon
    • A hydrometer
    • Bottles, corks, and a corker for bottling

    Step-by-Step Guide to Making Raspberry Wine

    1. Prepare the Raspberries

    Thoroughly wash the fresh raspberries (or defrost the frozen ones) and remove any stems or leaves. In your fermentation bucket, gently crush the berries to release their juices. This is best done by hand or with a potato masher. Avoid using a blender, which can cause a bitter taste due to the seeds being crushed.

    2. Add the Water and Sugar

    Boil the water and dissolve the sugar in it, ensuring it's fully mixed. Once the sugar has dissolved, let the water cool to room temperature before adding it to your crushed raspberries in the fermentation bucket.

    3. Add the Additional Ingredients and Create the Must

    Next, add the pectic enzyme, yeast nutrient, and wine tannin to the raspberry mixture and stir well. You now have what's called your "must". If you're using a Campden tablet, add it now to sterilize the must. Let it sit for 24 hours, stirring occasionally.

    4. Add the Wine Yeast

    After 24 hours, carefully introduce the wine yeast by sprinkling it on top of the must. Stir well and cover the container with a cloth or its lid. Attach the airlock and bung to the fermentation bucket, and let the fermentation begin!

    5. Primary Fermentation

    Allow your raspberry wine to ferment for approximately 5 to 7 days, making sure it remains in a cool, dark place. During this time, make sure to stir the must daily to keep the fruit submerged and prevent mold growth.

    6. Straining and Secondary Fermentation

    After the primary fermentation, use a fine-mesh strainer or cheesecloth to separate the solids from the liquid, being sure to squeeze out all of the juice. Transfer the liquid to a sanitized carboy or secondary fermentation container and attach the airlock. Let this sit for around 4-6 weeks, or until fermentation has ceased.

    7. Rack, Stabilize, and Bottle

    Once fermentation is complete, rack (transfer) the wine to another clean, sanitized container to remove any sediment. Allow it to stabilize and clear for a few weeks. Lastly, use your siphon to transfer the now-clear raspberry wine into bottles and cork them. Store the bottles in a cool, dark place for at least 6 months before enjoying your raspberry wine.
