    • Large food-grade bucket or container (minimum 5-gallon capacity)
    • Mesh bag or cheesecloth (for straining fruit)
    • Long wooden or plastic spoon
    • Hydrometer (for measuring sugar/alcohol content)
    • Fermentation airlock
    • Siphon and tubing
    • Glass carboys or other large, airtight containers for aging
    • Bottles, corks, and a corker for sealing the finished wine

    Step 2: Sanitize Your Equipment

Thoroughly clean and sanitize all equipment with a Campden tablet solution before starting your homemade wine project. This step is crucial to ensure that you're not introducing any harmful bacteria into your wine.

    Step 3: Prepare Your Fruit

Wash and de-stem your chosen fruit, and then crush it in a clean container using a sanitized potato masher or your hands. If using fruit juice, make sure it is free of preservatives, as they can inhibit fermentation.

Step 4: Add Ingredients to the Fermentation Vessel

Transfer the crushed fruit or juice to your sanitized fermentation bucket, and add water according to your recipe. It's essential to use a suitable recipe for the type of wine you're making to get the correct balance of sugar, acid, and flavors.

Add sugar and tannin (if using) to the mixture and then sprinkle wine yeast on top. Stir the mixture well with your sanitized spoon, ensuring the sugar is dissolved.

    Step 5: Initial Fermentation

Cover the fermentation bucket with a sanitized lid fitted with an airlock. Let the mixture ferment at a stable room temperature (between 65-75°F, or 18-24°C) for about one to two weeks. You'll notice bubbles in the airlock as the yeast ferments the sugar into alcohol.

Step 6: Strain, Siphon, and Secondary Fermentation

After the initial fermentation, use a sanitized mesh bag or cheesecloth to strain the fruit solids from the liquid. Siphon the liquid into a sanitized glass carboy or large airtight container, leaving the sediment behind in the fermentation bucket.

Attach an airlock to your secondary fermentation container and let the wine continue to ferment for another 1-2 months, or until the airlock shows little to no bubbling activity.

Step 7: Age, Bottle, and Enjoy!

Once the secondary fermentation is complete, siphon your wine off any remaining sediment into bottles, cork them, and store them in a cool, dark place for aging.
