  • Filtered water

    • A large, food-grade plastic or stainless-steel container (primary fermenter)
    • A large, sanitized cloth or mesh bag (to hold the crushed grapes)
    • Long wooden spoon or paddle (for stirring)
    • Glass or plastic airlock (wine siphon)
    • Wine bottles, corks, and corker
    • Wine hydrometer (optional, to measure sugar and alcohol content)

    Step 2: Clean and Prepare the Grapes

    Before you get started, remember that cleanliness is essential to ensure your wine turns out top-notch. So, be sure to wash your hands, working surface, and all equipment thoroughly.

    Next, it's time to clean and prep your grapes. Remove any damaged or overripe fruit and thoroughly rinse the grapes to eliminate any dirt or residue before crushing them. You can use a fruit crusher or simply use your hands to mash the grapes to a pulp. This process is affectionately called "must".

    Step 3: Mix in Yeast and Sugar

    Once you have your must, it's time to add the yeast and sugar. Depending on the desired sweetness of your wine, measre the amount of sugar you want to include. Keep in mind that an excessive amount of sugar can overpower the natural flavors of the grapes, so make sure to find a balance that suits your taste buds.

    Pour the sugar into the must and mix well with a sanitized paddle or spoon. Once the sugar is thoroughly dissolved, carefully sprinkle your wine yeast over the top of the mixture.

    Step 4: Primary Fermentation

    Cover the container with a sanitized cloth or lid and leave your concoction in a cool, dark place. Primary fermentation typically lasts for about one week. Keep an eye on your must and stir once a day to keep it aerated and to minimize potential spoiling.

    Step 5: Secondary Fermentation

    Following primary fermentation, it's time to strain your must using the mesh bag or a fine cheesecloth. After separating the juice from the pomace, siphon the liquid into a sanitized secondary fermenter such as a glass carboy, and attach your airlock to prevent oxidation. Let the wine sit for three to four weeks in the carboy.

    Step 6: Racking and Finishing

    During this step, known as "racking," transfer your wine into another sanitized carboy or container, leaving the sediment behind. This process helps to clear the wine and improve its overall flavor. You may need to repeat this step once or twice before your wine is completely clear and sediment-free - be patient, it's worth the wait!

    Step 7: Bottle and Age

    Your wine is now ready to be bottled. Use sanitized bottles, corks, and a corker to seal your precious creation. It’s recommended to age homemade wine for at least three months before diving in, but the longer it ages, the better it will taste!
