  • 3 lbs of elderberries (fresh or frozen)

  • 1 gallon of water

  • 1 package of wine yeast

Step by Step Guide to Making Elderberry Wine

  1. Prepare the elderberries: Remove the berries from their stems and wash them thoroughly. You can use fresh or frozen elderberries, but if using frozen, let them thaw before starting.
  2. Boil and mash: In a large pot, bring the water to a boil. Add the elderberries, sugar, yeast nutrient, and acid blend. Stir until the sugar is dissolved completely. Then, lower the heat and let the mixture simmer for about 30 minutes. During this time, mash the berries gently to release their juices.
  3. Cool and transfer: Remove the pot from the heat, and allow the mixture to cool to room temperature. Once cooled, pour the mixture into a straining bag or cheesecloth and squeeze out as much juice as possible into your primary fermentation container.
  4. Add the yeast: Sprinkle the package of wine yeast over the top of the liquid. Seal the container with an airlock and bung. Allow the mixture to ferment in a dark place at a temperature between 65°F and 75°F for about two weeks.
  5. Transfer and ferment: After the initial fermentation, siphon the liquid into a secondary fermentation container fitted with an airlock. Avoid transferring any sediment from the bottom of the primary container. Allow the wine to ferment for an additional two to four weeks or until the hydrometer readings remain steady for at least three days.
  6. Bottle and age: Once fermentation is complete, siphon the wine into clean bottles and cork them securely. Store the bottles in a cool, dark place for at least six months before sampling. For the best flavor, consider aging your elderberry wine for one to two years.
